The soft prune cake recipe
-
Ingredients:
- 9 oz of flour
- 6 oz of sugar
- 3 eggs
- 3.5 oz of butter
- 3.5 oz of milk
- 5-6 prunes
- 0.5 oz of baking powder
- 1 teaspoon of vanilla extract or vanillin
- 2 tablespoons of sugar to caramelize the surface
-
Preparation:
- Prepare the prunes first: cut them into pieces and put them aside.
- Put the eggs and sugar in a bowl, and whip the mixture until it becomes frothy.
- Melt the butter in a small pot, without making it boil. Then let it cool down.
- In the bowl with the eggs and sugar, add the sifted flour, alternating it with the milk.
- Finally, add the melted butter and vanilla extract, and keep mixing it until the mixture becomes smooth and without clumps.
- Prepare a baking mold of about 24 cm of diameter, pour in the mixture and put the prune slices all over the surface. Add 1-2 tablespoons of sugar to caramelize the surface.
- Bake in a pre-heated oven at 180°C or 356°F for about 40 minutes, until the cake is well cooked.
- Once baked, let it cool down and serve it. For a final touch, sprinkle a little bit of powdered sugar all over the slices of the prune cake.
